Semi Dried Tomato Bruschetta (Serves 1)

500g Plain Diced Semi Dried Tomatoes

Sourdough or country style bread

Several cloves of garlic

Fresh Basil Leaves

Extra virgin olive oil

Salt, Pepper

1. Cut bread into nice slabs and grill to golden brown.

2. Rub surface of bread with a peeled garlic clove

3. Toss together Diced Semi Dried Tomatoes, torn basil leaves, salt, pepper and olive oil and pile onto garlicky toasts.
