Mediterranean Chicken Salad (Serves 2)

1 tablespoon chopped onion

1 1/2 teaspoon minced garlic

1/2 teaspoon salt (divided)

1/2 cup olive oil (divided)

1/4 teaspoon Tabasco pepper sauce

2 cups diced chicken breast

1 medium tomato diced

6 pitted black olives

100g thinly sliced Semi Dried Tomato

6 mushrooms sliced

4 fresh basil leaves

1 head romaine lettuce washed and dried

2 tablespoon balsamic vinegar

1. Combine onion and garlic in a small bowl.  Sprinkle with half of salt and mash into a semi paste.  Add remaining salt, 1/4 cup olive oil and Tabasco sauce. 

2. Mix well in a medium bowl- diced chicken breast, tomato, olives, Semi Dried Tomato, mushrooms and basil.

3. Pour olive oil mixture over top and toss to coat well.

4. Slice romaine lettuce crosswise into 1 inch wide strips and place in a large bowl. 

5. In a small bowl whisk together balsamic vinegar and remaining 1/4 cup olive oil.  Pour over lettuce and toss to coat well.  Place chicken mixture on top.
