BLT Pasta (Serves 4-6)

500g Rollini pasta

4 tablespoon olive oil

2 tablespoon Semi Dried Tomato pesto

200g Semi Dried Tomato

2 teaspoons dried basil or oregano

2 cloves garlic, crushed

4 strips bacon rashers

250g baby spinach

salt, freshly ground pepper

Fresh basil leaves and Parmesan cheese to serve

1. Cook pasta in boiling salted water according to instructions on packet.

2. Heat oil in frypan, gently cook garlic and bacon, add pesto, Semi Dried Tomatoes, Salt and Pepper to taste.  Blend well.

3. Rinse spinach under boiling water for 2 minutes, squeeze out excess water.

4. Drain pasta, place in large bowl and add sauce to pasta.  Add wilted spinach and toss.

5. Serve with Parmesan shavings, fresh basil and freshly ground black pepper
